Catering for a Sustainable Future Group

The recently published CSFG White Paper on Climate Change highlights the unique collaboration between catering consultants, equipment manufacturers and professional distributors which is addressing the issue of future energy efficiency in commercial kitchens. image

Key to the White Paper's recommendations for government are support for increased staff training: "It is clear that the operator of commercial kitchens has an equal responsibility to that of the equipment manufacturer in ensuring that the equipment they are responsible for is operated in a manner that is not wasteful as far as energy, water and labour are concerned."

The paper continues: "It is estimated that up to 30% of kitchen utilities are wasted in the operation of a commercial kitchen...Staff training on
sustainability matters should be given a similar profile to that of kitchen hygiene."
